Tex-Mex Meatballs

Instructions

  1. Combine the egg, ground beef, 1 C cheese, bread crumbs, parsley, garlic, jalapeno, and cumin. Season to taste, then form into meatballs. Brown the meatballs, then remove from pan.
  2. Saute the onions in the meatball juice, then add the tomatoes and chipotle chiles and bring to a boil.
  3. Return the meatballs to the sauce and simmer until the meatballs are done. Top with the remaining cheese, cover, and cook until the cheese is melted.
  4. Plate and serve hot.
