Tex-Mex Meatballs

Ingredients
- 1 1/2 lb ground beef
- 2 C Mexican cheese blend, shredded
- 1/2 C Panko bread crumbs
- 2 T parsley, chopped
- 2 cl garlic, minced
- 1 ea jalapeno, minced
- 1 ea egg
- 1 t cumin
- 1 C onion, chopped
- 1 cn crushed tomatoes
- 2 T chipotle chiles in adobo sauce
Instructions
- Combine the egg, ground beef, 1 C cheese, bread crumbs, parsley, garlic, jalapeno, and cumin. Season to taste, then form into meatballs. Brown the meatballs, then remove from pan.
- Saute the onions in the meatball juice, then add the tomatoes and chipotle chiles and bring to a boil.
- Return the meatballs to the sauce and simmer until the meatballs are done. Top with the remaining cheese, cover, and cook until the cheese is melted.
- Plate and serve hot.
